15 years runnin places a few of my own gave way to a "regular job" M-F 9-5 when I married in 01.....man I miss it sometimes, but it sure is nice bein home on the weekends and holidays with my 2 lil girls
Sometimes for kicks, I walk into the back of my buddies restaraunt and tell his saute guy to go have a beer and come back in an hour ( or not..lol )
I just like to keep my hands wet so I do not totally loose it...
The one on top is a pretty cool crust....You just slice some Platanos thin. Use the green unripe kind... Then put en on a sheet tray in a slow oven....like 250-300 for like an hour or 2 depending on how thin you get the slices....once they are dry and crisp, you pulse em n a food processor or blender till you have a coarse meal out of em. Use em like breadcrumbs in the standard breading ( flour egg, breadcrumbs)
Saute em, flipping once....simple, once you get the bannana's dried
Viniagretts is a snap too. 3/1 standard Acid to Oil ratio.
I used Maracuya ( passionfruit ) pulp as fresh squeezed fruit was not in season when I did this.( available frozen in any publix here on the east coast or any Latin Market )
1 part pulp to 3 parts oil.
Place puilp or juice in blender or processor, Then add some cilantro, set on low and drizzle in the oiul so it emulsifies. S and P to taste. ( may need a tad lemon juice, or White Vinnegar - like 1/8 T or so just to give it some acidity based on quality of pulp
...Viola
Hardest part is balancing that Sh*t on top of the molded rice...lol |

| Sounds good. I am no stranger to the stove and pretty darn good with a grill or smoker, so I am definitely going to give this one a try. Appreciate the info, by the way, I went on the Deerfield Pier Forum and read some of the posts there, you included, sounds like a place to try when I get over that way. Must be nice to be able to fish during your lunch break, you dog. |
